garlic winesauce pizza!

I’m totally a big fan of pizza…it is very easy and fun to make with friends. The other night a few good people and I decided we were having pizza for dinner. We made two whitesauce pizzas with portabella’s, button mushrooms, orange sweet peppers, pepperjack, mozarella, sharp cheddar and lots of fresh basil. Here is what we need.

Sauce.
Poured a half inch of heavy whipping cream into a very small skillet, and turned the burner on low-ish, about 3/10. Fried up a handful of garlic and a handful of small potent onions in a frying pan and added to sauce. Added 3/4 a cup of Riesling.

Dough.
We purchased dough from a local bakery called La Petite Ouvre. There are lots of recipes for Pizza dough, at it’s basic it just Flour, Oil, Water, Salt, in aprox that order. Here is another recipe for dough.

When you’re rolling out the dough, it helps a lot if you sprinkle flour on during the process, helps to combat the pizza dough ’shrinking’ back upon itself.

We spread dough across some flat cast iron pans. Ladled on some cream sauce…more or less depending on what you desire, but don’t worry about the pizza being soggy. The cream will firm up quite a bit, also helps to put the mushrooms and peppers on first, then ladle the cream sauce over the top.

Mozzarella really makes the cake, but I like to mix in more pungent cheeses too, so I used sharp cheddar and pepperjack, but go for whatever happens to be on hand! This pizza would also probably be really yummy with chicken, if you fried it up with some garlic and butter, but at any rate…take the pan, dough, and everything in it, and put in a preheated oven at around 375…time could vary, one of ours was done at 15 minutes, the other at 18.

So yummy!!! and easy to eat and clean, not so many dishes. Fast, and yet not totally terrible. You can put anything on it =)
